Slow-cooked onions
This recipe requires a few minutes to peel and slice the onions, and then it’s just a set-and-forget-until-morning recipe. You can eat slow-cooked onions straight (we sometimes do that) or use them on top of soup or salad. For a real treat (if you have an air fryer) roll the slow-cooked onions in chickpea flour and air fry for 10 minutes. That makes a surprisingly delicious breakfast. [Our photographer arrived before the recipe was done, but the photograph gives you a good idea of the setup. You also don’t need to quarter the onion. That was a food stylist preference.] In essence: peel onions, slice, and set, and you’ll have delicious smells and tastes in the morning.

Ingredients:
- 4 Onions
Instructions:
- Peel and slice onions into rounds.
- Separate slices and add to the Instant Pot (this may nearly fill the pot).
- Set Instant Pot to slow cook for 18 hours.
- Open the lid after 10 hours (10 to 18 hours) and enjoy. The longer it slow-cooks the better it tastes. since this is not under pressure, you can occasionally open the lid to check on how brown it is.
