Black Bean Quinoa Stew
The hardest part of this recipe is assembling the ingredients (and finding the can opener), but after that it’s a breeze. People rave about this meal.

Cook Time: 25 Minutes
Ingredients:
- 1 small red onion, chopped
- 14.5 oz can fire roasted tomatoes
- 2 cups water or vegetable broth
- 2 Tbsp chopped garlic
- 1 cup frozen corn kernels
- 2 15-oz can black beans (1 of the 2 with added jalapeño), drained and rinsed
- 2 sweet potatoes, chopped
- 1 1/2 cup quinoa
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 Tbsp taco seasoning
- black pepper
- 3 Tbsp chopped cilantro
- Juice of 1 lime
Instructions:
- Saute the onions
- Add all but the last three ingredients to the Instant pot.
- Set on high pressure for 5 minutes.
- Natural pressure release for 10 minutes.
- Release the pressure, open the lid, and add the remaining ingredients.
